Grape variety: 100% Pecorino
Winemaking:Pecorino is harvested very early in the season to avoid high alcohol volumes and to maintain its acidic freshness; thanks to this choice we propose a very peculiar Pecorino. The must is decanted cold, sheltered from oxigen so the aromatic precursors of the variety are not lost. Fermentation happens at low temperatures and, afterwards, the wine is refined for several months on its lees.
Wine Tasting: Pecorino presents with a charged yellow tending to golden. To the nose it is appreciated for its sapidity and the mineral content of the wine with a hint of tropical fruit. To the taste it has a strong structure: a very high extract and a pronounced acidity.
Cosc’n is a word in Offida's dialect. It represents the utensil used to shape sheep milk based cheeses by hand. This cheese making tool was used up until 50 years ago in Piceno's farmhouses. Every sharecropping family produced one weel per day. For this reason we decided to pay homage to a tool symbol of a farmer's daily life.
