Appellation: Terre di Offida Passerina Passito DOC
Grape variety: 100% Passerina
Winemaking: The long withering in the field results in dehydrated grapes upon harvest with an incredibly high sugar concentration. Fermentation and refining in wood barrels.
Wine tasting: intense golden colour. Ripe, caramelised and candied fruit scents. To the taste it's sweet, warm and persistent. Great structure. Optimally drunk with desserts. A wine for meditation.

His nephews called him Zi’ Zò, but his real name was Emidio. The patriarch of the Stracci family was quiet and contemplative. How to pay homage to this figure if not with a wine suited for meditation. Passerina grapes, like the Psithia grape cited by Virgilio, is left to wither on the vine almost till the winter solstice.
