Appellation: Offida Passerina DOCG
Grape variety: 100% Passerina
Winemaking: Soft pressing, cold decanting of the must and alcoholic fermentation in semi-reductive conditions. Refined in steel with repeated batonage.
Wine Tasting: Straw yellow going to greenish colour. Defined varietal flavours can be perceived with olfactory sensations of exotic fruit and white flowers. Freshness and lightness are the passwords to this wine. To the taste there is a confirmation of the fruity notes perceived by the nose.

The versatility of passerina is told to have been known to the ancient Romans, useful even for nursing bees back to health. So versatile that it grants sublime flavours to the low yielding DOCGs and pays off the debts to the exceptional yields of IGT.
