Winemaking: Soft pressing, cold decanting of the must and alcoholic fermentation in semi-reductive conditions. Refined in steel with repeated batonage.
Wine Tasting: Straw yellow going to greenish colour. Defined varietal flavours can be perceived with olfactory sensations of exotic fruit and white flowers. Freshness and lightness are the passwords to this wine. To the taste there is a confirmation of the fruity notes perceived by the nose.
Every spring, the Hoopoe, a proud and vain bird, hovers above the trellis posts of the Passerina vineyard, where it exhibits her neat plumage and flaunts its distinctive crested head. The trellis posts on the ridge seem to mimic this crown-like shape on the hilltop. As a matter of fact, it is right here that the queen of the Picenian vine varieties dwells, revealing herself every spring, just like the Hoopoe, inebriating us with her bouquet of scents.
