Appellation: Marche Rosato IGT
Grape varieties: Montepulciano 70%, Cabernet Sauvignon 30 %
Winemaking: in the Marche region every producer can shape their rosé choosing the varieties they think are most appropriate. We decided to unite a traditional variety to an international one. The red grapes are processed with winemaking in white which means without contact with the skins: soft pressing after crushing and fermentation at 16° C.
Wine Tasting: cherry pink colour, to the nose, Montepulciano's plum and cherry combine with pyrazines from the Cabernet generating an intriguing harmony. To the taste it's pleasant because the acidity of Montepulciano is balanced by the fruitiness derived by the fermentation.
Today rosés seem to be on everyones lips, just like Cabernet was 20 years ago. However, a vine lives for at least 20 years and real winemakers don't simply follow trends... They need to have the patience to wait: a variety will eventually show its potential and rise to the occasion!
