Winemaking The must is decanted and entrusted to the care of slow-metabolism yeasts before it goes off to be fermented so as to exalt the aromas of this grape variety. Short stop on the yeast post-fermentation and our wine is ready.
Wine Tasting: straw yellow, to the nose one can appreciate the fermentation aromas, particularly white flowers. To the taste freshness and lightness prevail, it is absolutely an "easily drinkable" wine.
Passerina is a late blooming variety and as such, closes the harvest for white grapes. Winemakers are tired, but the intoxicating freshness of Passerina lifts the moral, granting new energy which will be necessary to conclude the most crucial time of the whole year for us winemakers.
