Winemaking: Fermentation and maceration of the skins at 28°C for about a month. Refined in barrique for 18 months and then in bottle for 6 months.
Wine Tasting: Ruby red to garnet colour To the nose you perceive varietal perfumes and scents from the refining in barrique with sensations of spices, toast and overripe fruit. To the tast it's warm, soft, persistent. A wine with great structure.
The winter of 1956 was the coldest of the last century. For months travelling was incredibly difficult, but this did not stop some brave farmers from embracing their shotguns and venturing into the cold searching for the "wolf" responsible for the swooping of small farm animals. And this is how the story of a poor hungry, cold dog, believed to be a wolf, was retold many times over the years.
